Just a few thoughts to start:
1. You're sure you put the server into recovery mode properly?
2. Are you on a PC connected to your router via wired or wireless?

I'm not able to restore my home server using the server recovery disc. It says it can't find the server. I checked my linksys router and it shows the I.P address of the home server but no host name. My suspicion is that the recovery disc is scanning the network and looking for the home server host name. It can't the matching host name and that is why it says "no server found".
Anybody knows by the home server does not broadcast its host name when in recovery mode. I did have success with restoring the server in the past.
I've run into this issue with my ISP's router. Unplugging the router from the internet sometimes worked but putting it on a separate switch always worked. I believe it has to do with the private IP addressing the recovery process uses.
Try powering off both the server and your pc. Either connect the server and pc to a separate switch so they are the only devices on it or try connecting a network cable between the two if you don't have a switch. Power on your pc and let it get to the desktop. Start the recovery disk but don't go through the prompts yet. Turn on the server and put it in recovery mode then finish the restore wizard (choosing either Factory Reset or Recovery mode)and it should succeed without any issues.

I'm 100% the server is in a recovery mode - health LED flashing aqua and purple. Both machines are connected to the router via wired.
I did try a you suggested - unplugged the router from the internet, put the server and pc to a separate switch and so on..... but still got "no server found". If I look at the client list on my router I can see the i.p address of the server assigned to the server but the host name is blank/empty. Any other suggestions? Many thanks for all your help.
Did you hook the pc and server up to the switch with no other devices attached? They must be the only 2 devices, no router or anything that assigns an IP address. The pc should also be set for DHCP.

I connected both the server and PC to a switch - no router, no DHCP. The network LED on the server is not lit. And so the network LED on the PC. And still got "No server found". I will have to get myself a crossover network cable and try connect the server directly to the PC.
You should be able to connect directly, without a crossover cable.
And you could try with the router connected -- but nothing else attached to it.
