1. Working as designed. Check out the MS WHS White Paper on the Drive Extender technology. (It's not "RAID", it is a new technology called "Drive Extender".)

2. Again, working as designed (same reference as #1). There are a LOT of arguments not to defrag at all, but if you are going to do it definitely do not use the built-in W2003 tool. Personally, I use PerfectDisk 2008 and schedule it for weekly. But get a tool that is specifically for WHS. "You" cannot move the files around -- at least not with out messing up the file system. MSS/WHS is designed to be used and left alone. Don't try to (micro-)manage it!

3. I suspect you would gain by letting MSS administer iTunes BUT I AM NOT AN iTUNES USER so I will defer on this point to someone else.
